(9p) Aubergine Schnitzel

Today’s supermarket bargain was a 9p aubergine and the recipe is an adaptation from an old copy of the Tesco Magazine

To up the thrifty factor, I whizzed up the breadcrumbs from the crust of the bread I made the other day (it’s always handy to keep a small container of breadcrumbs in the freezer for when you might need to make bread sauce or y’known, an aubergine schnitzel!)

Aubergine Schnitzel

Ingredients

Makes 4 schnitzels (2 per person)

1 (reduced price) aubergine
1 crust’s worth of breadcrumbs
1 tbsp olive oil
25g feta, crumbled
2 dried chillis
25g flour
1 egg, beaten

1. Pre-heat the oven to 180℃/360℉/Gas Mark 4

2. Slice the aubergines lengthways, dust with flour and coat lightly in the beaten egg using a pastry brush

3. Combine the breadcrumbs, feta, chilli, salt, pepper and 1 tbsp of oil and sprinkle the mixture evenly over the top of the aubergines

4. Bake in the centre of the oven for approximately 20 minutes, until golden on top

5. Serve with salad
